Is there a set of height/width/depth standards for counters, tables, chairs available anywhere? Also I want to design and make my own chair backs because I just don't have one-size-fits-all lumbar spine requirements and I really need support in that area. Anyone "been there-done that-got-the t-shirt to prove-it and want to share?

You want to search the web for "Architectural Standards," and "Human Dimensions." These books on Amazon appear to have a lot of what you need:

As for your chair backs: Find a chair the you like and copy the back shape. Always make a prototype of any seating. Chairs are tricky to get right.
